I eat this on repeat. The best part is that it’s very customizable, BUT…try it my way before you get crazy. To some, the ingredient combo might sound a bit weird – you just have to try it though. I promise not to write a novel on my recipes with a huge backstory, but sometimes there are helpful notes that I feel I need to include for you to have the best experience.
I’ll start by saying this…I don’t love the exact-ness of recipes. I’m not sure if exact-ness is a word. I think the notion that if one little thing is off you could ruin the whole dish might discourage people from just trying something out. We have all tasted food before, you know what things taste like, so if you want to adjust something just do it! If you don’t love it, try it at least 2 more times and adjust things from there. if you don’t like it after that….give up. JK.
I adapted this recipe from @gracie_norton so you know it’s good. Anything she posts I typically try. She is a far more committed #wellnessgirly though so she would use grass-fed beef and all that. I will be using whatever is on sale.

Ingredients
- Ground Beef (I like a more lean option for this, grease isn’t my jam)
- Pineapple
- Cottage Cheese (to me, the only kind is Good Culture – it’s superior)
- Taco seasoning (you can use whatever seasoning you want, really)
- Cheddar Cheese, shredded
- Sweet potato or some sort of root veggie medley

Brown your beef. I like mine SUPER crispy. Some may call it burnt. I also like it really crumbly.

Add the taco seasoning to the beef, stir it around. I like to add it and then cook it for a minute.

Add the shredded cheese right to the beef and let it melt in, stirring it until it’s super melty – trust.

Cook your veg however you want. I just throw these Chef Hak’s root veggies in the air fryer with some Mrs. Dash on them or use some of the taco seasoning, you don’t need much of anything on them really.
